About This Product
Yoshikawa Cook-Pa Wok Turner
The turner is the one that does the actual work in a wok. Wide, flat blade for getting under a whole batch and turning it over in one motion, with a slightly curved leading edge that follows the wok's contour so nothing gets left behind in the base.
Like the rest of the Cook-Pal Ren line, it's steel rather than stainless or silicone, made in Niigata and put through Yoshikawa's high-temperature treatment. That means you can scrape, press and lean on it against the wok surface without hesitation. It's the same material as the pan, so neither one loses.
The handle is long enough to keep your hand away from the flame and made of timber, which stays cool when the rest of the tool doesn't. It arrives pre-seasoned with vegetable oil, so it's ready to go straight out of the box.
403mm end to end.
Care
Steel rusts if you let it, so treat it the way you treat your wok.
Wash in warm water after use and dry it completely with a cloth. Don't leave it sitting wet in the sink.
For stuck-on residue use a brush or a soft scouring pad. Skip abrasive cleaners and steel wool — they scratch the surface and give rust somewhere to start.
If rust does appear, it comes off. Make a paste of salt and vegetable oil, work it into the affected area, leave it 10 to 15 minutes, then wash and dry as normal.
Store it dry, out of direct sun and away from anything damp. If it's going into a drawer for a few months, wipe a thin film of oil over it first.
