Yoshikawa Yukihira Induction Saucepan — 18cm (1.7L)

Walk into a kitchen in Japan, domestic or professional, and there's a good chance a yukihira pan is on the stove. It's the default. Light enough to lift and pour one handed, thin enough that it comes up to temperature almost immediately, and shaped so it does several jobs without fuss.

The 18cm is the one that ends up living on the stovetop. Pasta for one or two, a sauce that needs watching, soup reheated properly rather than in the microwave, a small batch of rice. At 399 grams it's genuinely light, and the thin steel responds fast enough that turning the heat down actually does something — useful when you're working with something that catches easily.

Built from 18-0 stainless steel, which contains no nickel, so it suits anyone with a nickel sensitivity. Works on every cooktop, induction included.

Key Features

Tsuchime hammered finish — The dimpled surface spreads heat and disrupts the surface tension of boiling liquid, so it's far less likely to climb the sides and boil over.

Spouts on both sides — Pour left handed or right handed, clean either way.

Volume markings inside the pan — Etched at 500, 750, 1000 and 1200ml, so you can measure straight into the pan and skip the jug.

Nickel free steel — 18-0 stainless. Light in the hand, safe for nickel sensitivities.

Before You Use It

This is for simmering and boiling. Soups, stocks, sauces, noodles, blanching, reducing. Not for stir-frying or deep-frying — the steel is deliberately thin, and sustained dry high heat can warp or discolour it.

Care

Hand wash only. Dishwasher detergents will wreck the wooden handle.

The handle is fixed with a screw. The timber darkens slightly where it meets the pan, which is normal. Check the screw occasionally and tighten if it works loose.

Soft sponge, mild detergent. A rainbow sheen inside is a normal oxide layer on stainless and lifts off with vinegar or citric acid.
