Toshitaka has its roots in the life's work of Toshio Tamada, who began his knife-making journey at just 12 years old in 1940. After more than five decades in the trade, he founded his own workshop in 1992 under the name Cutlery Tamada.

In 2000, his son Takafumi began training under him at 18, and in 2004 the business was renamed Toshitaka, a combination of both their first names. Toshio was later recognised as one of Seki City's outstanding engineers in 2014, and passed away in 2020 at the age of 91, having spent 79 years devoted to the craft.
