Japanese AUS-10 steel is a high-quality stainless steel renowned for its balance of toughness and durability while still holding a good edge. It is on the softer side of most Japanese Stainless Steels, slightly softer than VG10 or Ginsan. Enriched with vanadium, it achieves a superior durability, making it ideal for crafting durable, sharp knives that withstand rigorous use.

Recommended Maintenance

Store it in a dry environment using magnetic strips, knife rolls, or sayas. Avoid hitting hard or frozen objects and twisting the blade while cutting. These knives are not dishwasher safe. Clean with hot water and a soft cloth, and dry immediately after use to prevent rust spots on the high carbon steel. For more information please read the blog below.

Fabulous Bread Kinfe

This bread knife meets every expectation, and then some. It works so well, hardly any pressure need be applied — cutting into crusty bread with this knife is practically like cutting into butter. I am very satisfied with this product.

Excellent all purpose bread knife

It's a bread knife but it's also an "everything" knife. It has a variegation of subtle serrations on the knife edge that makes it possible to cut any kind of food from a bread loaf to an onion, without the blade skipping to accidentally cut your hand. The teeth are low to the blade and change from wide to narrow across the blade's margin, which gives one the ability to change directions through mid-cut. Beautiful blonde wood handle and superbly crafted for such a low price. Thanks people - I'll be forwarding this item on.
