Yoshikawa Yukihira Induction Saucepan Set — 14cm, 18cm, 22cm
Walk into a kitchen in Japan, domestic or professional, and there's a good chance a yukihira pan is on the stove. It's the default. Light enough to lift and pour one handed, thin enough that it comes up to temperature almost immediately, and shaped so it does several jobs without fuss.
This set covers the three sizes that actually get used. The 14cm for melting butter, warming a small amount of sauce, boiling a couple of eggs or reheating leftovers without dirtying a big pot. The 18cm as the everyday middle ground — vegetables, a batch of rice, soup for two. The 22cm for stock, noodles, blanching greens or anything that needs room to move.
All three are built from 18-0 stainless steel, which contains no nickel, so they suit anyone with a nickel sensitivity. They stack together for storage and work on every cooktop, induction included.

Key Features
Tsuchime hammered finish — The dimpled surface increases the area available for heat transfer and disrupts the surface tension of boiling liquid, which makes it far less likely to climb the sides and boil over.
Spouts on both sides — Pour left handed or right handed, clean either way.
Lightweight, nickel free steel — 18-0 stainless. Easy to handle, safe for nickel sensitivities.
Three sizes that nest — Stack down into each other and take up less cupboard space than a single conventional pot.
Before You Use Them
These are simmering and boiling pans. Soups, stocks, sauces, noodles, blanching, reducing.
They are not built for stir-frying or deep-frying. The steel is deliberately thin, and sustained dry high heat can warp or discolour it.
Care
Hand wash only. Dishwasher detergents are harsh enough to wreck the wooden handles.
Each handle is fixed with a screw and it's normal for the timber to darken slightly where it meets the pan. Check the screws now and then and nip them up if they work loose.
Soft sponge, mild detergent. If you get a rainbow sheen on the interior, that's a normal oxide layer on stainless and it lifts off with vinegar or citric acid.
