Sakai Kikumori was founded in 1926 by Kawamura Hamono as a wholesaler, and they work with some of the best blacksmiths in Japan. Being a smaller wholesaler, they have the flexibility to create their own brands and pursue creative projects that larger brands choose not to do. They have excelled in this area, creating a line of products that are of some of the highest quality we've ever seen.

Outstanding Sharpness, Minor Food Release Issues

This is a very nice knife overall. I gave it 4 stars because, while it's excellent in many ways, the food release could be better—especially when cutting carrots, as slices tend to stick to the blade.
That said, I really like the look of the knife, the handle is comfortable, and the weight feels well-balanced. The sharpness is outstanding right out of the box and makes cutting effortless. Despite the food release issue, it's a great knife that I enjoy using and would recommend to others.
