"Artisan Pepper?", we hear you say.
Hear us out, we were skeptical at first too. BUT, after the first few cracks and taking a whiff, this is seriously good stuff. Side by side, we took in the aroma of standard supermarket pepper, and then a good sniff of Pep, and the difference was enormous. Rich, full, concentrated black pepper aromas translate across to your dishes. It's a no brainer for us from now on.
PEP's Black Peppercorns (Memot Region, Cambodia)
PEP's black peppercorns are grown in the fertile red volcanic soil of the Memot region in Cambodia. Black pepper from south and southeast Asia has been prized for its kick and fragrance for a seriously long time, with origins going back as far as 2000 BCE, so you're in good company. Just look at something like black pepper crab, a dish that puts this humble peppercorn right at the centre.
The aroma is floral, bright and herbaceous with a little hint of aniseed. These peppercorns are denser than your average, which concentrates all that flavour and spiciness, so a little goes a long way. They come in a reusable smoky glass jar to cut down on oxidation, with an adjustable ceramic burr so you can dial in your ideal grind.
A few ideas for the culinary adventurous, to show off just how versatile this everyday spice can be:
- Pepper and butter crab or prawns
- Gruyere and pepper gougères or crackers
- Lemongrass, honey and pepper grilled pork
- Pepper, lime, soy or fish sauce and coriander dip for grilled meats and seafood
- Sprinkled over pears, watermelon, figs, peaches, nectarines and blood orange
