Japanese Blue Super Steel, an elite variant of the "Aogami" series, is a high-carbon steel alloyed with chromium, tungsten, and added vanadium. This composition enhances its wear resistance, edge retention, and overall toughness. It will still rust if left wet for too long, but not as quickly as any of the other carbon steels. Favored in fine knife crafting, Blue Super Steel is renowned for producing exceptionally sharp and durable Japanese knives.

As Sharp as it is Beautiful.

Of the dozen quality Japanese knives that I own, this Bunka arrived in my kitchen with the sharpest edge yet.
I was trying to describe over the phone to my friend just how sharp it is.
It’s like I was dreaming or imagining it as the knife cuts through veggies and protein so easily.
It made me feel like a pro sushi chef, it cuts that good.
Otherwise, it is a beautiful looking piece.
I had been looking for a knife with a turquoise spacer in maple or similar handle material and a blade with a Kurouchi finish for my collection.
There was some staining on the blade after cutting chicken fillet. Not on the Kurouchi finish, but on the lower, silver, stainless cladding. I washed it immediately after use and tried quite hard to remove the staining, short of polishing. Haven’t used the knife much yet, so will see how that goes…
