The Bunka is your small/medium sized prep solution. If you prefer a slightly shorter blade length but still need to prep veggies and smaller cuts of meat, this is your stop. The angled "K-Tip" allows for finer tip work and can be used to sweep ingredients across the board so you don't dull your edge.

Japanese White Steel #2, a traditional high-carbon steel, is cherished for its purity and fine grain structure, enabling razor-sharp edges, at the cost of being reactive. It is one of the easiest steels to sharpen, but cannot be left wet for even short periods otherwise rust spots can occur. If you’re fastidious in your knife maintenance, this knife can steel can be extremely rewarding to use.

They source the forged blanks from Yoshikazu Tanaka, Satoshi Nakagawa among others, then grind, sharpen, and finish their knives in-house. We've had the pleasure of visiting them multiple times and are such a vibrant, young, and committed team. Their packaging has been custom designed in collaboration with French artist Phillipe Weisbecker, of which this packaging houses one of the finest blades we have ever seen.

Surprisingly Effective and Versatile

If I’m being honest, I bought this with some concern it wouldn’t be practical but because I liked the look of it so much, I pulled the trigger. Happy to report it has exceeded my expectations and I use it a lot more than I thought I would. Mine measures 5mm over the stated 135mm length and being a Hado, the edge geometry, fit and finish are spot on. Only small issue is my wife tried this out and she now seems to have adopted it, so I no longer get to use it much.
