"Originally from Poland, I came to the UK 14 years ago. I earnt a decent living as a middle manager in the retail yet this career left me feeling wholly unfulfilled. I knew that I wanted to create something that would last. I was used to getting dirty and working with my hands – so I was thrilled to learn that Hereford College of Arts ran a blacksmithing course. The next thing I knew, I’d quit my job and started training.
Since then I produced a series of superb artisan tools and knives, using age-old skills to produce modern objects of desire. My inspiration comes from the history and the traditional methods, getting to grips with hammer, tongs, and fire. For having these skills has paid off more than a career in retail ever would."
STEEL BREAKDOWN – Spicy White is a High-Carbon Steel, hardened to 64HRC by Leszek. It has great edge retention and toughness, and has been etched for corrosion resistance.

Knife Information
Tadafusa manufacture their knives in the city of Sanjo, well known across Japan as the ‘town of blacksmiths’. The likes of Yoshikane, Hinoura, and Kawamura all hail from the same city. Tadafusa was founded in 1948 by Sone Torasaburo, who began making sickles, knives, and other bladed tools using traditional forging methods, but then began to specialise in kitchen knives, which has culminated in the immaculate pieces you see here.
Best paired with a camellia oil, wooden saya and a 1000/6000 whetstone

These Tosa knives are crafted by Kosuke Muneishi, known for a technique known as Warikomi, where a glowing piece of cladding is split and the core cutting edge inserted, then forged together by hand. It is a complicated process that requires a high level of finesse and competence.
STEEL BREAKDOWN – Blue Steel is a traditional, high-carbon steel made by Hitachi Metals in Japan. It is the favourite steel of many knife makers and chefs across the world for it’s fantastic edge holding ability, toughness, and ease of sharpening. It contains few stainless elements, and as such will develop a patina, and develop rust spots if left wet after use. It requires a little more care and maintenance than something like VG-10 (Stainless Steel), so consider this when purchasing a Blue Steel knife as your first Japanese knife.

Knife Information
A relatively young but masterful blacksmith, Shigeki Tanaka crafts his knives in a workshop in Miki City, Japan. Known for being skilful and creative, he works with almost all knifemaking steels, from high carbon like Aogami, to powder stainless steel. His range of R2/SG2 Black Damascus had our jaws on the floor when we received our first shipment from him!
The first thing we noted was the impeccable presentation. A Palownia wooden box houses all his R2 knives and is lined with red velvet. The etching of these blades has left a dark, misty, striking Damascus pattern, and are dressed in Walnut handles. Beautifully thin grinds ensure fantastic cutting performance, and 64HRC guarantees phenomenal edge retention
