Blade Type

The Santoku knife, a classic in Japanese kitchens, translates to "three virtues," symbolizing its proficiency in slicing, dicing, and mincing. With a shorter, versatile blade and a balanced design, it's ideal for a range of tasks, from cutting meat to chopping vegetables, making it a beloved all-purpose tool.

Steel Type

Japanese SG2, also known as R2 steel, is a high-end, powdered metallurgy stainless steel and one of the finest knife-making steels available in Japan. It is a favourite of many for its exceptional hardness and edge retention. Its fine, uniform grain structure enables razor-sharp edges, all the while holding an edge for much longer than Carbon steel knives, without needing to be concerned about rust appearing.

Care Information

This knife is made from a stainless steel and will be robust and resistant to rust. While it will not rust quickly like pure carbon, it is still best practice to not leave this knife wet for extended periods as it's stain-less, not stain-none! A light patina (colouration and seasoning of the steel) will still form over time.

Yu Kurosaki

Yu Kurosaki has become one of Japan’s most celebrated blacksmiths — known for his bold aesthetic choices, cutting-edge techniques, and dedication to pushing the boundaries of traditional knifemaking. Beginning his journey in his teens and apprenticing for 12 years under Hiroshi Kato, Kurosaki established his own forge in 2014 and has since earned recognition from the Japanese government as the youngest ever to be named a Master Blacksmith.

His knives are instantly recognizable for their striking Tsuchime and Suminagashi finishes, thin grinds, and use of high-performance steels such as SG2, HAP40, and stainless-clad Blue Super. Kurosaki’s Fujin series, with its dramatic wind-patterned hammer finish, helped cement his reputation as a blacksmith who blends artistry and technical brilliance in equal measure.
