Asahi have been manufacturing synthetic cutting boards for Japanese knives for over 50 years. Over this span of time they have refined their products and now offer some of the best quality cutting boards in the world.
There are some great benefits to using a synthetic board:
- They are Antibacterial/Mould resistant. This is a huge advantage over wooden cutting boards that hold bacteria even after washing.
- Easy on knives. They have a wood-like texture and good feedback.
- They are scratch and wear resistant, and very tough. A test was completed after 50,000 cuts in a controlled environment, and the synthetic board had approximately 66% less wear depth.
- Stability. These boards are weighty, they don't slide around on the bench.

Specifications
Made in Fukuyama City, Hiroshima Prefecture, Japan
Material: Natural Wood
Size: 350×220×40mm
About West Japan Tools
West Japan Tools is the brainchild of Takayuki Shibata, based in Fukuyama City. Shibata-san is probably best known in knife circles as the founder of Masakage Knives, but his curiosity didn't stop there. After years of cooking for his family, he found himself frustrated by the tools available to him, and that frustration pushed him to start developing his own kitchen products, beginning with a quest to build the perfect frying pan, which eventually expanded into a broader range of kitchen tools and accessories.
Care
Hand wash with warm water and mild dish soap after each use, never put it in the dishwasher. Dry it immediately with a towel and stand it upright to allow air to circulate on both sides. Regularly apply a food-safe mineral oil or beeswax board conditioner to keep the wood hydrated and prevent it from drying out and cracking. Light surface scratches are completely normal and part of using a wood board.
