A Chinese cleaver, known as a Cai Dao, is a multipurpose kitchen knife traditional in Chinese cuisine. Characterized by its large, rectangular blade, it excels in chopping, slicing, and mincing. Despite its robust appearance, it's designed for precision tasks, from slicing meat to finely mincing herbs and vegetables.

This knife is made from a high-carbon steel and as such, will require a little more care than a regular off-the-shelf knife. It must be dried shortly after use, as prolonged exposure to moisture can cause rust spots to appear. A very light coat of oil during storage also helps to prevent rust spots. A patina (colouration and seasoning of the steel) will occur with use.

Sharp Out of the Box, Even Better After Sharpening.

This cleaver is a beast in the kitchen. It came sharp right out of the box and only got better after the first sharpening. It glides through boneless meats and vegetables with zero effort. The wide blade isn't just for show, it's super useful for scooping and transferring chopped ingredients. The raw, forged look gives it serious character. If you’re used to Western knives, this is a refreshing upgrade. Just remember to rinse and dry it immediately after use to keep it in top condition.
