The Sakai Ryuta brand is a collection of blacksmiths from Sakai, Osaka. This region is very much the epicentre of single bevel knife making in Japan. These mirror finish Yanagiba are just shy of 330mm, and have a very gentle bend in the blade road, and as they are not perfectly straight, they have been deemed factory seconds. The bends are very, very slight and will not drastically affect cutting performance. 

STEEL BREAKDOWN

White Steel is known for two things: steel purity, and incredible, surgical sharpness.  It has very little added elements, except for trace amounts of Sulfur and Phosphorous. It will rust and patina quite easily, so be sure to wipe down immediately after use, and beware when using a Shirogami knife on things like onions or potatoes, as it can leave orange or brown marks on food.
