Sakai Kikumori SG2 Western Gyuto 210mm
Knife Information
Sakai Kikumori was founded in 1926 by Kawamura Hamono as a wholesaler, and they work with some of the best blacksmiths in Japan. Being a smaller wholesaler, they have the flexibility to create their own brands and pursue creative projects that larger brands choose not to do. They have excelled in this area, creating a line of products that are of some of the highest quality we've ever seen.
The SG2 range by Sakai Kikumori are elegant, refined pieces with western handles, welded integral bolsters, and clean migaki blade finishes. As expected the feel is excellent, balance is perfect, edge retention is extremely good, and they're very, very comfortable.
Steel Breakdown
SG2 is a powder stainless steel made by The Takefu Special Steel Company in Takefu, Japan. It is, in our eyes, the ultimate combination of edge retention, stainless properties, and ease of sharpening. Having more carbon than the Carbon Steels like White and Blue, yet more stainless elements than VG10, knives using this steel are the best of both worlds without the downsides.
Knives with an SG2 core are becoming more prevalent in Japan due to these reasons. Their overall cost may be higher, but is well justified in our opinion.
