Sakai Kikumori was founded in 1926 by Kawamura Hamono as a wholesaler, and they work with some of the best blacksmiths in Japan. Being a smaller wholesaler, they have the flexibility to create their own brands and pursue creative projects that larger brands choose not to do. They have excelled in this area, creating a line of products that are of some of the highest quality we've ever seen.
The Nihonko are a stellar workhorse knife range using SK carbon steel. Think FKM, but with better edge retention. A comfortable, tapered western handle with classic blade profiles means a brilliant robust all-rounder with great performance for an excellent price.
Steel Breakdown
While not quite on the same level as Blue or White Carbon Steel, SK Carbon steel is still an excellent choice for a budget-friendly steel with great edge retention (between VG10 and Ginsan we find), good toughness, and durability, while retaining great ease of sharpening.
