Miyazaki Kajiya Blue 2 Black Damascus Tsuchime Gyuto 240mm
Knife Information
Haruki Miyazaki-san is a 35-year-old blacksmith based in Nagasaki. He works his forge on a small island in Goto, and crafts everything himself, from start to finish. This requires a well-rounded skillset as well as forging, heat treatment, and sharpening knowledge. He apprenticed under Ooba-San in Fukuoka, then after he graduated high school and 5 years of apprenticeship, he moved back to Goto islands and opened his own workshop.
Best paired with a camellia oil and 1000/6000 whetstone.
This knife is great for:
✅ Extreme sharpness with little effort on a whetstone
✅ Those who like lighter knives
✅ General purpose cutting (veg, smaller meats etc)
Things to consider:
❌ A reactive steel, will rust if left wet
Steel Breakdown
Blue Steel is a traditional, high-carbon steel made by Hitachi Metals in Japan. It is the favourite steel of many knife makers and chefs across the world for it’s fantastic edge holding ability, toughness, and ease of sharpening. It contains few stainless elements, and as such will develop a patina, and develop rust spots if left wet after use. It requires a little more care and maintenance than something like VG-10 (Stainless Steel), so consider this when purchasing a Blue Steel knife as your first Japanese knife.
