Yoshikane knives are highly sought after pieces crafted in Sanjo, Niigata. Founded in 1919, Yoshikane have been producing knives for over 100 years, and is headed by Mr. Yamamoto, who is a 4th generation blacksmith. He will not just ‘sell his knives to anyone’, he remarked to us, in order to sustain the Yoshikane name as being one of the top producer of knives in Japan in terms of quality, finish, and attention to detail. This can evidently be seen as Chefs Edge is the only Australian retailer of this line of incredible chef knives.

The hand-hammered kurouchi finish on these blades assists with food release, and helps protect the blade from rust, as the cladding and core are reactive carbon steel. The core is White #2, considered the purest of the Japanese steels, and is very easy to sharpen and comes razor sharp straight out of the box. These knives feature a subtle convex grind which results in excellent cutting performance, and are finished with a roasted chestnut handle.
