For the people of Java, Indonesia, blacksmithing has been a part of their culture for hundreds of years. While not necessarily dating back to the age of the Samuria, crafting items from steel by hand is a huge part of their history.
Chefs Edge has collaborated with a team of blacksmiths in East Java to create the Isih line of chef knives. Isih in Javanese means to be ‘still’, an homage to their blacksmithing history where it was written that the blacksmiths would meditate and fast in order to achieve the perfection of their craft.
They are a great entry point into a handmade, high carbon steel knife with very good fit, finish, grind, and performance for the price point. Paired with stunningly figured Amboyna Burl handles with a Rosewood bolster and cap. Each knife comes in a black sheath.
