Kanjo

Relatively unknown in Australia, Master Kanjo Tsukahara makes his chef knives in a small family run workshop in Gifu, Japan. Coming from a family of master sharpeners, it’s easy to see why these are some of the sharpest out of the box knives we’ve ever held.

Made using HAP40 as a core steel, these knives are gifted with extraordinary edge retention and toughness, yet are feather light and very well balanced. Paired with grey octagon handles and a subtle hammer finish.
