Great knife

I bought this on the strength of having the 210mm Gyuto of the same model and it performs and sharpens just like that. I holds a great edge as well, thin and light.
It has a reactive cladding but after some protein slicing all will be fine and it will take a protective patina.

This knife was almost too beautiful to use, razor sharp on arrival, so much that I actually cut myself on first use. Great knife at a great price. Will definitely buy more from chefs edge, the whole transaction was 10/10.
